ENJOY THE TASTE OF TRINIDAD

Jars contain 190ml of full-flavour pepper sauce in 3 different strengths: Seriously Hot, Medium Hot and Mild.
Each strength uses Scotch Bonnet peppers, herbs and spices, specially blended for flavour, first and foremost, and then heat. The pepper sauces are made with natural ingredients leaving the sauces delicious and healthy.
There are no artificial colours, no artificial flavours and no added sugar. But there’s real taste and options when you want to turn up the heat.
It’s the perfect accompaniment to any meal; for Vegetarians and Vegans too.

“There are herbal and citrus notes on the nose. Coriander character leads the flavour before the heat of the Scotch bonnets begins to take hold. The heat has length and the overall sauce is rounded and balanced. Nice colour with appealing flecks of chilli and green. The aroma is rich with herby notes and enticing. In the mouth it feels well-blended. It’s not especially complex on the palate and those flavours don’t get much chance to shine before the heat comes in powerfully. That said, the level of vinegar is judged correctly and there is a freshness of flavour that we liked – we just wanted more.”

THE AUTHENTIC STORY
I have long been influenced by the home cooked food growing up in Trinidad. In particular, my Aunt who made homemade sauces was a big contributor to the type of food that I enjoy. I fondly remembered one of my aunt’s recipes for a sauce she always made to accompany meats, poultry, fish and vegetables. Scotch Bonnet Peppers were the base of the sauce, and she would change the pepper content depending on the heat she wanted to acquire. Variations of the sauce would be made for gatherings and occasions where it always went down extremely well.
Within the family, recipes were only passed to the girls in each generation. This recipe was passed from my Aunt to my daughter Polly – however, the recipe was lost for many years.
Then on a break to Trinidad & Tobago, this recipe was found and again shared with me (via my daughter).
​I have now created Authentic Products Limited, which will produce my auntie’s recipe (improved with Polly’s approval) plus two new variations. The sauces will have differing heat levels ranging from a mild sauce, through medium hot to seriously hot.
​I hope the flavour and natural ingredients will attract significant interest in these sauces, created to enliven food not numb the taste buds.
